Shrimp Alfredo

This will be the best Alfredo sauce you've ever tasted.

Recipe

Ingredients:

1 lb. shrimp, peeled and deveined.

2 cups Heavy Cream

1/2 cup Grated Parmesan Cheese

1/2 cup Grated Pecorino Romano Cheese

1 stick softened, unsalted butter

1 TSP. cracked black pepper

1/4 TSP. Nutmeg

1 lb. Fettuccine or Linguine Noodles

1/2 cup Flat-Leaf Parsley, finely chopped

1 TBSP. Olive oil

1 TBSP. unsalted butter

Salt

Old Bay Seasoning

Directions:

Shrimp

In a deep sauté pan over medium high heat, melt 1 TBSP. butter with 1 TBSP. olive oil. Season shrimp with salt, pepper, and old bay. Sear shrimp for 1-1 ½ minutes per side. Transfer shrimp to plate and set aside. After the shrimp cools, chop it into big pieces.

Bring water in a big pot to a boil and add 2 TBSP. of salt.

Sauce

After removing the shrimp, lower the heat to Medium. Add Heavy Cream and 1 stick of softened, unsalted butter. Break up the butter as it's melting and whisk until combined. Let the cream simmer and reduce for about 10 minutes, whisking occasionally. Add nutmeg and 1 TSP. of black pepper and whisk. Add the cheese and whisk until melted. Add the chopped shrimp back to the sauce and continue to simmer while the noodles cook.

Cook noodles according to "al dente" directions on the package. Drain pasta and dump into Alfredo sauce along with a handful of Parsley. Stir the noodles to combine with the sauce and shrimp. Let cook for just a couple minutes. Transfer to serving bowl and garnish with left over Parsley.
